Wine production in the area dates back far beyond the current industry, and evidence has been found that grapes were being fermented for wine here in Phoenician times (8th century B.C).
Throughout the city there are architectural testaments to the local wine culture. The many bodegas or wine cellars in El Puerto de Santa Maria could easily be churches or palaces to judge by their elaborate decoration. Maybe this is why local people also refer to these old buildings as “cathedrals”. Most of them can be found in the “Campo de Guia” complex, close to the River Guadalete which crosses the city on its way to its outlet in the Bay of Cadiz.
The tipple “par excellence” of El Puerto de Santa Maria is Fino wine, a kind of dry sherry. The secret of this wine is the ageing process that it undergoes. Two kinds of systems are used for these; a static ageing system (seasonal system), and a dynamic ageing system (sediment or “solera” system). The first method ensures that the wine is pure, and not mixed with other wines, and the dynamic system (which began to be used in the 18th century) consists of blending in the best wines of other harvests to reinforce the maturing process.
Other products of the bodegas of El Puerto de Santa Maria include brandy, vinegar and other wines such as “Amontillado”, “Oloroso”, “Palo Cortado”, “Pale Cream”, “Cream” and “Pedro Ximenez”.
